Tuna & Sweet Potato Patties

Once the Sweet Potato is baked and ready, just throw all the ingredients into a bowl, mix, form patties and fry until golden and crisp. So simple to make. I cook these quite often as they are a favourite in our household. I try to cook up a batch every other week so that we have something healthy to snack on.  These can also be made into a main meal, just add a green salad to the plate or the humble mash potato and peas. I have a few variations of this recipe where I substitute some of the ingredients.  This one is made from baked sweet potato.  To avoid throwing out food, if you have left-over mash potato, this can be used instead of the baked sweet potato and will reduce the preparation time. 

INGREDIENTS 

1 large sweet potato – peeled and cut into 1cm thick slices 

1 garlic clove – finely chopped 

1 cup of breadcrumbs 

¼ cup of sultanas – roughly chopped 

2 eggs 

425gr can tuna in olive oil – I buy tuna from Aldi, they are good quality and value for money 

Small bunch of parsley – roughly chopped 

Olive oil 

Salt /Pepper 

METHOD 

  1. Preheat oven to 180C. 
  2. Lay sweet potato on an oven tray, sprinkle lightly with olive oil, salt and pepper and garlic. 
  3. Cook in the oven for approximately 20 minutes or until soft and golden, then remove from oven and allow to cool slightly.  
  4. While the sweet potato is cooking, place remaining ingredients in a large bowl and mix well.  Once the sweet potato has cooled slightly, add to the mixture in the bowl and mix.  Roll mixture into balls about the size of your palm, flatten slightly and pan fry both sides, until golden brown. 
  5. If not consuming immediately, keep them stored in the fridge in an airtight container for approximately 5 days.
