Hands up who loves a good satay dish!  This Speedy Satay Chicken dish will have you serving dinner in no time.   No fussing around with lots of spices and ingredients.  It’s simple and fast to make.

With this dish you can pour the sauce over the chicken skewers or serve on the side as a dipping sauce or both.   The marinade makes this dish a real winner and a keeper.  By using the lighter version of peanut butter and coconut cream it makes the dish healthier but still fantastically delicious. 

Also if you can’t be bothered with threading the chicken onto skewers, you can skip this step.  But I think the end result speaks for itself, we feed with our eyes and it does make a fabulous looking dish when placed on the dinner table with bowls of fluffy rice and vibrant colourful salad serve with lime wedges.

INGREDIENTS

6 chicken breasts – this will make about 12 skewers

2 tablespoons brown sugar

½ teaspoon curry powder

3 tablespoons reduced fat smooth peanut butter

¼ cup light soy sauce

270ml can light coconut cream

METHOD

  1. Combine the sugar, curry powder, peanut butter, soy sauce and coconut cream in a large bowl. 
  2. Slice each chicken fillet into long pieces approximately 3cm thick and add the chicken to the marinade, turning to coat evenly.  Allow to sit for 30 minutes in the refrigerator if you have the time. 
  3. Remove the chicken from the marinade while reserving the remaining marinade.
  4. Thread the chicken onto the bamboo skewers, about 2 -3 pieces for each skewer. Cook the chicken skewers in a pan until golden brown on each side ensuring the chicken is cooked all the way through.
  5. As each chicken skewer is cooked, I like to place them in a pan in a low temperature oven to keep them warm.  I also cover them to ensure they do not dry out.
  6. Heat the reserved marinade in a saucepan, bring to the boil, then reduce the heat to low and to allow the sauce to thicken.   
  7. Place the skewers onto a serving platter, drizzle with sauce.
  8. Serve with rice and salad, some Greek yogurt and a squeeze of lime juice
