Summer Prawn & Mango Lettuce Cups

I just love the freshness of this starter with its tangy dressing accompanied with a healthy guilt free creamy dipping sauce made from Greek Yogurt.

It’s so easy to put this together, just follow a few simple steps.  I guarantee that your whole family will enjoy these healthy Prawn and Mango Lettuce Cups. 

INGREDIENTS

2 mini cos lettuce, leaves separated and washed – need 15 leaves

2 mangos, peeled and cut into cubes

1 avocado, peeled and cut into cubes

15 cooked prawns, peeled, deveined and cut into 1cm pieces

2 shallots – thinly sliced

Dressing

 ½ tbs mint leaves

1 lime, juice and zested

2 tbs lemon juice

1 tbs oil

2 tsp white sugar

Dipping Sauce

1 tbs sweet chilli sauce

1/3 cup Greek yogurt

METHOD

  1. Whisk all the dressing ingredients together in a bowl and place aside.
  2. Combine mangos, avocado, prawns and shallots in a separate bowl.
  3. Add the dressing to the mango mixture and toss very gently.
  4. Spoon mango mixture onto lettuce leaves and arrange on serving platter.
  5. Add the dipping sauce ingredients into a separate bowl and mix till just combined.
  6. Serve Cos Cups with dipping sauce.
