Overnight Oats

Are you too busy for breakfast in the morning? 

This overnight porridge is ideal for a quick breakfast on the run for those busy mornings when you simply don’t have enough time and gives a feel-good start to the day.  

Oats are a great form of carbohydrate which supply the body with the energy it needs, also making it an ideal pre-workout snack, and best eaten at least 1 hour before you train since oats can feel heavy and take a while to digest.

This is such a quick dish to make, and it tastes so delicious.  It’s another one that I prepare every other week and store in the fridge so that we have something healthy to grab.

Prepare this the night before and leave overnight in the fridge ready to dig in the next day.

INGREDIENTS

2 ½ cups rolled oats

½ tsp ground cinnamon

½ tsp cinnamon sugar

1 tsp vanilla extract

1/3 cup raw hazelnuts

1/3 cup almond flakes

½ cup sultanas

¼ cup dried blueberries

1 pear – grated, no need to peel

1 red apple – grated, no need to peel

500ml milk – of your choice

150ml light thickened cream

1tbsp demerara sugar

METHOD

  1. Simply add all the ingredients into a large bowl and mix till well combine. 
  2. Store in an airtight container overnight in the fridge. 
  3. The next day, spoon it into a bowl and serve with your favourite fruit.
