Easy Chocolate Bark

With Easter just around the corner there’s lots of temptation for us to indulge in the chocolate goodies adorning the supermarket shelves right now.  This easy Chocolate Bark recipe will surely satisfy those of us with a sweet tooth.   With just 5 ingredients you can create a healthier treat to serve this Easter.   It’s packed with nuts and seeds and is made from 70% dark chocolate which we all know is a superfood.  

There is an abundance of choice when it comes to dark chocolate and for variety, in this Chocolate Bark recipe, you can use 125g of plain 70% dark chocolate and 125g of flavoured dark chocolate if you wish.  I quite like using the Raspberry & Almond flavoured Moser Roth brand of dark chocolate that you can purchase from Aldi stores. 

You can make this Chocolate Bark, anytime of the year and store it in the fridge so that you have a healthier sweet treat on hand.   This Chocolate Bark will also make fantastic gifts.  Just pop a few into a cellophane bag, tie with ribbon and give to family and friends.

INGREDIENTS

250g dark chocolate

2 tbs pistachios, roughly chopped 

1 tbs pumpkin seeds, roughly chopped

1 tbs dried blueberries, roughly chopped

1 ½ tbs dried cranberries, roughly chopped

METHOD

  1. Melt the chocolate in a bowl over a saucepan of water.  Bring to a simmer and whisk the chocolate till melted.  
  2. While the chocolate is melting, toast the pistachios and pumpkin seeds in a small frypan over the stove top till slightly brown.  Remove and place in a bowl.  Add the blueberries and cranberries to the same bowl and mix till combined.  
  3. On a flat tray, covered in baking paper, pour the melted chocolate, and spread with a spatula so that it’s roughly 3mm thick.  
  4. Sprinkle the nut and seed mixture over the melted chocolate.
  5. Place the tray in the freezer until set.  
  6. Once set, it’s ready to cut into pieces. You can break them by hand or use a knife. 
  7. Store in an airtight container in the fridge until ready to package or serve.
