Crunchy Chicken Noodle Salad

Crunchy Chicken Noodle Salad

Made with pre-packaged coleslaw mix and BBQ chicken, all you need to do is cook the noodles, combine the dressing ingredients, mix it all together and you will have a wonderful nutritious meal that will keep you feeling full.

This Crunchy Chicken Noodle Salad is also great for packed lunches or for those upcoming springtime picnics.  Just remember to keep it cool or refridgerated.  Enjoy!

INGREDIENTS

270gr packet of Udon noodles

Juice of 1 lime

1 tbs peanut oil

1 tbs sweet chilli sauce

1 tbs peanut butter

2 tsp brown sugar

2 tbs hot water

1 store bought BBQ chicken, bones & skin removed, white meat shredded

300gr packet finely shredded coleslaw mix

½ cup raw cashew, roughly chopped

2 spring onions, thinly sliced – reserved some for garnish

METHOD

  1. Prepare the noodles according to the packet instructions.  Drain well and set aside.
  2. Place dressing ingredients, lime juice, oil, sweet chilli sauce, peanut butter, sugar and water in a screw top jar and shake well until combined.  Set aside.
  3. Combine noodles, chicken meat, coleslaw, cashews and spring onions in a large bowl.  Drizzle ¾ of the dressing and gently mix through. 
  4. Serve up into individual bowls, sprinkle with some spring onions, and drizzle with remaining dressing.
