Berry & Yogurt Cups

Who loves a tasty dessert and one that’s healthy, easy to prepare and will only take you minutes to put together.  Best of all, there is no baking or mixing involved!

Try these Berry & Yogurt Cups for a dessert that will truly impress your family and friends and the kids will love them too.

You can mix up your ingredients to suit your taste, by adding your favourite nuts, granola or muesli. For this Berry & Yogurt food hack I’m using the Jordan’s brand of oat clusters, it’s crunchy and contains large clusters with small amounts of nuts.  

There are plentiful supplies of strawberries, raspberries, blueberries and blackberries in the supermarket right now, so using seasonal fruit also keeps the cost down.  Mangoes are just coming into season and this is another tasty option. 

You can also use flavoured yogurt to match the fruit combination. And the thicker the yogurt the better.  For these Berry & Yogurt Cups I like to use vanilla yogurt as this goes nicely with any fruit combination.  There are lots of flavours so pick your preference and have fun experimenting.   The kids can get involved too! 

For best results the yogurt and fruit should be well chilled before putting the components together.  You can make these ahead of time, just make sure they are stored in the fridge.  If you have the time, its best to prepare these Berry & Yogurt Cups just before serving.  

I promise it will only take you minutes to put together.   These will also make a fantastic breakfast or for a snack in between meals.  Give these a try for your next BBQ or dinner night.  They look dazzling when served in individual glass jars or simple drinking glass will do the trick.   Pop in a fancy spoon and you have a delightful, healthy and delicious dessert.

INGREDIENTS

1 punnet raspberries or strawberries

1 punnet blackberries

600 gr tub of vanilla yogurt

1 cup oat Clusters

Almond flakes

Cinnamon sugar

METHOD

  1. Place 3 berries at the base of each of the 4 serving cups.
  2. Next top with enough yogurt to cover the berries..
  3. Sprinkle 1 tbs of the oat clusters over the custard.
  4. Repeat the above process, layering the berries, yogurt and oat clusters.
  5. To finish off, top with any left-over berries and sprinkle with almond flakes. 
  6. Lightly dust with cinnamon sugar.
  7. Store in the fridge until ready to serve.
