Salmon is so versatile. There are many ways to cook Salmon. Salmon can be be baked, grilled, poached or pan fried. Salmon goes well with Asian based sauces.  In this recipe I use a sauce made from garlic, lemon, honey and mustard, the perfect combination!   The longer you marinade the better, so if you do have time do this or you can make the marinade and coat the Salmon ahead of time and leave it in the fridge until you are ready to cook.

Considered a superfood, Salmon is rich in Omega 3 Fats which is great for heart health. Salmon is also a good source of protein, essential for building and repairing muscle.  This Honey Mustard Salmon recipe is one of my go to dishes and is eaten in our household at least once a week.

Serve this Honey Mustard Salmon on a bed of rice with a simple tossed green salad. It will also go well with mash potato and sauteed beans. I bet it will become a family favourite in your household too!

INGREDIENTS

2 Salmon fillets (skin off & no bones)

1 tbs olive oil

1 garlic clove, crushed & finely chopped

1 tbs Dijon mustard and 1 tsp for later

1 tbs honey

1 tbs lemon juice

1 tbs thickened cream

1 tsp brown sugar

Salt & pepper

METHOD

  1. Wash and pat dry Salmon fillets.
  2. In a bowl combine the garlic, Dijon Mustard, honey & lemon juice, and whisk until smooth.
  3. Add Salmon fillets and coat well.  If you have time leave the Salmon to marinade in the fridge for at least 30 minutes so that it can develop the flavour.
  4. Then simply add oil to a fry pan and cook the Salmon. 
  5. Once cooked to your liking, remove the Salmon from the pan and place onto a plate.  Scrape away any charred bits left in the pan and turn the heat to very low.  Add the remaining Dijon mustard, cream, and sugar.  Whisk until you get a smooth consistency.
  6. Serve Salmon on a bed of rice with a tossed green salad or vegetables of your choice.
  7. Pour sauce over Salmon or serve on the side.
