Creamy Chicken Sensation

Creamy Chicken – Perfect quick dinner solution

I have had this recipe for the past 30 years and cook it regularly.  It is one of my go to favourite dishes.   It’s so easy to prepare and cook but the end result is so delicious. 

I make more than enough of this so that we have left overs.  You can slice any leftover chicken and add to a salad.  If you are lucky enough to have any leftover sauce boil some rice and mix the sauce through and have as a side dish or on its own.

INGREDIENTS

4 chicken breast fillets

½ cup plain flour

½ cup grated parmesan cheese

1 cup thickened light cream

½ tbs chicken powered stock

1 garlic clove crushed

Salt & pepper

METHOD

  1. Slice each chicken breast fillet in half so that you have 2 pieces, this will give you a total of 8 portions.
  2. In a flat tray, mix the flour, parmesan cheese, salt & pepper together until combined.  Coat each portion of the chicken with the flour mixture.  If you have time you can leave the coated chicken in the fridge for 30 minutes to set. 
  3. Cook each breast fillet in a fry pan until cooked through and golden brown, do not overcook.
  4. Remove the cooked breast fillets onto a plate and allow to rest.
  5. Meanwhile, using the same fry pan and keeping all the cooking juices in the pan, add the cream, chicken stock and garlic.  Allow this sauce to simmer, but do not boil. 
  6. Just before you are ready to serve, add the cooked chicken back to the fry pan with the cream sauce and warm the chicken through.
  7. Serve with a salad or vegetables of your choice.
